I was wondering if it was possible to edit the “pencil icon” for editing, and consequently also the text shown as a tooltip.
I would like to put the “lens icon” that is used for the View and write “View Journey” in the tooltip.

You can change the language phrase and icon using the Language_Load server event. Read help file examples in Server Events and Client Scripts.
